Taco night is always a hit, but sometimes tacos can become a little boring. This is a great twist for Taco Tuesday and pairs really well with rice and beans. Your family will be asking for seconds with this delicious meal. This meal is so simple!
Ingredients
- 2 cups crumbled corn bread
- 10oz can of your favorite enchilada sauce divided
- 1.5lbs ground beef or turkey
- 8oz can of tomato sauce
- ½ shredded Mexican cheese
Directions
- In a small bowl combine cornbread, ½ cup of enchilada sauce and ground beef/turkey
- Form into 1” meatballs
- Brown meatballs in a non- stick skillet until brown
- Transfer meatballs to your crockpot
- Add the remainder of the enchilada sauce, tomato sauce and stir together with meatballs
- Cook on low for 4 hours or high for 7 hours
- Serve over Cilantro Rice or with tortillas
Sprinkle with Mexican cheese before serving
