National Spaghetti Day!

1.) Spaghetti Pie Bake

Ingredients: 
  • 1lb- ground beef
  • 1/2 bread crumbs
  • 1/2 chopped onion
  • 1/2 cup of milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups of cooked spaghetti
  • 1 egg beaten
  • 11/2 cups spaghetti sauce
  • 11/2 cups shredded mozzarella cheese


Directions:
1. Combine beef, bread crumbs, onion, salt, pepper and mix in a mixing bowl and mix together until well blended
2. Press the mix into the bottom and sides of a pie plate. You can also make mini pies by pressing the mix into muffin cups
3. Bake at 350 degrees for 25 mins
4. Drain off fat
5. Mix spaghetti with egg until the cooked noodles are covered
6. Pour into the baked pie shell
7. Top with Sauce and cheese
8. Bake again for 10 minutes at 350 degrees then let stand for 5 minutes
9. Serve and enjoy!




2. Versatile Tomato Basil Spaghetti

Ingredients:
  • 4 Tablespoons olive oil
  • 2-3 cloves of garlic
  • 10 tomatoes peeled, seeded and chopped (can substitute canned whole tomatoes) 
  • salt and pepper to taste
  • 3 Tablespoons of fresh chopped basil 
  • fresh parmesan cheese
  • 1 pound of spaghetti or angel hair pasta ( You can also substitute whole wheat pasta or zucchini spaghetti!)


Directions:
1. Heat olive oil in a skillet and sauté garlic for one minute
2. Add tomatoes, salt and pepper. Cook for 10-12 minutes or until your tomatoes soften
3. Stir in basil and cook another 5 minutes
4. Serve over your choice of spaghetti or zucchini noodles!



3. Creamy Chicken Spaghetti

Ingredients:
  • 2 pounds of chicken breasts- cooked and shredded
  • 16 oz package of cooked spaghetti
  • 2- 14.5oz cans stewed tomatoes, chopped
  • 2- 103/4 oz cans cream of chicken soup
  • 1- 103/4 oz can of cream of mushroom soup
  • 4oz can of mushrooms drained
  • 8oz pasteurized processed cheese spread, cubbed

Directions:
1. Combine all ingredients in a sauce pan
2. Heat over medium heat until it is warm and the cheese is melted
3. Serve with crusty bread and enjoy!

4. Pizza Spaghetti

Ingredients:
  • 16 oz of spaghetti uncooked
  • 1 pound ground beef
  • 1 pound ground sausage
  • 8 oz sliced mushrooms
  • 1 onion chopped
  • 1 green pepper chopped
  • 3.5 oz package of sliced peperoni 
  • 2- 24 oz jars of mushroom and pepper pasta sauce (Any sauce will work)
  • 2- 4oz cans of sliced black olives, drained- optional

Directions:
1. Cook pasta according to the directions on the package and drain
2. In a skillet over medium heat brown the beef and sausage
3. Drain and set aside
4. Add mushrooms, peppers and onion to the skillet and sauté until tender
5. Stir in Beef and sausage mix with pepperoni and pasta sauce
6. Reduce heat to low and heat
7. Add spaghetti and olives if desired and mix



5. Spaghetti Lentil Bolognese 

Ingredients:
  • 2 Tablespoons of olive oil divided
  • 1 small onion chopped
  • 2-3 cloves of garlic chopped
  • 1 cups sliced carrots
  • 4 cups of your desired mushroom
  • 1 teaspoon Italian seasoning 
  • 2 Tablespoons tomato paste
  • 1/2 cup red wine
  • 1 can of crushed tomatoes
  • 2 cups of water
  • 1 cup uncooked brown lentils
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Spaghetti, Whole wheat spaghetti, zucchini spaghetti

Directions:
1. Heat 1 tablespoon of olive oil over medium high heat with garlic and onion
2. Add carrots, mushrooms and stir until soft for about 5 minutes
3. Add Italian herbs and tomato paste and stir until blended
4. Add in wine and cook for 2 more minutes
5. Add the tomatoes with lentils, salt and pepper. Bring to a boil then allow to simmer for 40 minutes
Serve over desired pasta and top with parmesan cheese and remaining tablespoon of oil

6. White Bean Spaghetti

Ingredients:
  • 1 pound of spaghetti
  • 1 Tablespoon of olive oil
  • 2 cloves of minced garlic
  • 1- 15 oz can great northern beans, rinsed and drained
  • 1/2 cup chopped parsley
  • 1/4 cup grated parmesan cheese
  • salt and pepper to taste

Directions:
1. Prepare pasta according to box directions. Keep about 1/2 cup of the pasta water when draining
2. In a large skillet heat oil and garlic until golden
3. Add beans and gently stir
4. Cover and set to low heat
5. Mix pasta in the bean mixture. If bean stick, slowly add in the pasta water
**This is delicious over zucchini noodles!**

7. Italian Sausage Spaghetti

Ingredients:
  • 1 pound sweet Italian pork sausage sliced
  • 1/2 cup water
  • 2- 14.5 oz cans diced tomatoes
  • 26oz jar your favorite pasta sauce
  • 6.5oz can of sliced mushrooms
  • Package of your favorite spaghetti noodle

Directions:
1. Brown sausage in a skillet over medium heat
2. Add in water- cook until simmering
3. Cover and reduce heat to medium low and simmer for 15 minutes
4. Add tomatoes with juice and increase heat to medium
5. Cook uncovered until the liquid starts to thicken
6. Stir in pasta sauce and mushrooms and heat
7. Serve over your favorite pasta or zucchini noodles

8. Simple Spaghetti Ring

Ingredients:
  • 16 oz package of spaghetti cooked
  • 2- 10oz packages of frozen spinach, cooked and drained
  • 1/4 cup chopped onion
  • 4 eggs beaten
  • 11/3 cups grated parmesan

Directions:
1. Mix ingredients together
2. Pour mix into a greased Bundt pan
3. Cover and bake at 375 degrees for 25-30 minutes
4. Let stand 5 mins before removing from the pan



9. Family Favorite Spaghetti

Ingredients:
  •  8 oz package of spaghetti uncooked and broken in half
  • 2 pounds ground beef
  • 2- 103/4 oz cans tomato soup
  • 1- 103/4 can cream of mushroom soup
  • 2 cups of milk
  • 1/4 cup dried minced onion
  • salt and pepper to taste
  • 11/2 cups shredded cheddar cheese divided 

Directions:
1. Cook Spaghetti according to package
2. Brown beef in a skillet over medium heat and drain
3. Transfer spaghetti to a greased 9x13 baking dish
4. Add beef and remaining ingredients (save 1/2 cup cheese for topping)
5. Bake uncovered at 350 degrees for 45-60 mins until golden on top
6. Sprinkle with remaining cheese then bake until the cheese has melted
7. Enjoy!

10. Refreshing Lemon Spaghetti

Ingredients:
  • 1 pound of spaghetti
  • 1 package of pine nuts, toasted
  • 1 cup chopped parsley
  • 1 bunch green onions
  • 1/2 cup olive oil
  • Zest from 2 lemons
  • Juice from 3 lemons
  • Grated parmesan cheese to taste
  • Chicken, shrimp of white fish of your choice
  • Balsamic vinaigrette 

Directions:
1. Marinate chicken or fish in balsamic vinaigrette
2. Grill or sauté
3. Mix together lemon juice and zest with olive oil
4. Toss spaghetti with lemon sauce and add pine nuts, onions, parsley and cheese
5. Place chicken or fish on top and enjoy
