Family Favorite Scandinavian Almond Bars are so simple, yet absolutely delicious. This is a crowd pleaser for any event, or a simple sweet weeknight treat. I typically have to double or triple the batch, as these disappear quickly at our family events. Considering adding this treat to your holiday cookie exchange!
Ingredients:
13/4 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon of salt
½ cup butter or margarine
1 cup of sugar
1 egg
½ teaspoon of almond extract
3-4 tablespoons of milk
½ cup of sliced almonds
Almond Icing: Combine 1 cup of sifted powdered sugar, ¼ teaspoon of almond extract and 3-4 tablespoons of milk for a drizzling consistency.
Directions:
1. Preheat oven to 325 degrees
2. Stir together the flour, baking powder and salt.
3. In a large mixer bowl beat butter/ margarine until smooth. Add sugar and beat until fluffy. Add egg and almond extract and beat until combined. Add flour mixture and mix.
4. Divide the dough into fourths. Form each fourth into a 12-inch roll. Place 2 rolls 5 inches apart on a baking sheet. Roll and flatten the dough until it is about 3 inches wide.
5. Brush the flattened dough with milk and sprinkle the top with almonds.
6. Bake for 12-14 minutes until the edges are golden.
7. While the cookie is still warm, and cooling cut them diagonally into 1-inch strips.
8. Once they cool- Drizzle with almond icing
