Bake A Difference with OXO!

Support Cookies for Kids Cancer and Share the Joy of Giving With Your Kids

September 24, 2012
September is National Childhood Cancer Awareness Month and Cookies for Kids Cancer and OXO are doing great things to fight Pediatric Cancers of all kinds.

Cookies for Kids Cancer raises money through local bake sales all over the Country, you can see a list of upcoming events here. And OXO is "Baking a Difference" by matching proceeds from registered bake sales.

This creates a great opportunity to teach your kids about giving and charity. You can bake some cookies for a local Cookies for Kids Cancer bake sale with your own kids and donate them to the sale.

We asked Cookies for Kids Cancer to share a recipe from their cookbook and they suggested the one that started it all, the original chocolate chip oatmeal cookie that is the foundation of the charity. And we asked OXO (an amazing supporter of Cookies for Kids Cancer) for their tips on the best products to make baking easy and fun for kids.

Cookies for Kids Cancer says “Don’t bother making these cookies if you are scrimping on chips!” We couldn’t agree more.

Ingredients:

2 sticks (1/2 pound) unsalted butter, at room temp.
1 cup light brown sugar
½ cup granulated sugar
1 large egg, at room temp.
1 large egg yolk, at room temp.
1 Tbs vanilla extract
2 cups all purpose flour
1 cup quick-cooking or old-fashioned rolled oats
1 Tsp baking powder
1 Tsp baking soda
1 Tsp kosher salt
3 cups semi-sweet chocolate chips

For the tools, we like to “think with the end in mind” and the first tool you need is an OXO Good Cookie Spatula. These limited edition items help raise money for Cookies for Kids Cancer. Next, the OXO measuring cups are awesome. The patented angled markings let you look down into the cup to see how full it is, no more squinting at the side, then adding more. OXO’s egg beater is another favorite, it comes apart and goes back together for easy cleaning, and it’s the kids favorite tool to help with. And the OXO cookies scoops are great for making consistent round cookies, the large size is our favorite. With the right tools an ingredients we are good to go.

Preheat the oven to 325 F. Line a cookie sheet with parchment paper
Place butter and sugars in the bowl of a mixer fitted with a paddle and beat until smooth and creamy. Add the egg, egg yolk, and vanilla, one at a time, beating well between additions.

Place the flour, oats, baking powder, baking soda and salt in a separate bowl; mix well and add to the butter mixture. Beat until everything is well incorporated. Scrape down the sides of the bowl, add the chocolate chips, and beat again.

Form the dough into heaping-teaspoon-size balls (OXO large cookie scoop works perfectly) and place them about 2 inches apart on the prepared cookie sheet. Using your palm, gently press down.
Transfer to the oven and bake until the cookies begin to brown at the edges, 12 to 15 minutes. Cool on the cookie sheet. Transfer to wire rack and repeat with the remaining dough.
